Colorful Pepper Skewers
Prep/cooking time: Approximately 1 hour
3 chicken breasts, boneless and skinless
3 large onions
3 bell peppers, red, yellow and green
3 tbsp. sunflower oil
1 lime, juiced
3 tbsp. soy sauce, reduced sodium
Rinse and halve the bell peppers and remove the seeds and ribs. Peel the onions. Cut the onions, bell peppers, and chicken breasts into 1-inch cubes. Alternating between the vegetables and the chicken, thread onto skewers and place in a glass cooking dish. In a small bowl, whisk oil, lime juice, and soy sauce and drizzle over the skewers. Refrigerate for 30 minutes. Grill over high heat or place in a 425-degree oven for about 10-12 minutes or until chicken is cooked properly.
