Apricot Carrot Salad
Serves 4
Prep time: Approximately 20 minutes
Ingredients:
5 large carrots, grated
½ cup dried apricots, diced
½ cup walnuts, chopped
1 garlic clove, minced
¼ cup Greek yogurt plain, low fat
¼ cup mayonnaise, low fat
2 tbsp. honey
Salt and pepper to taste
Directions:
Mix everything up in a large bowl and serve!
