Apricot Curry Chicken
Serves 4
Prep/cooking time: Approximately 20 minutes
Ingredients:
1 tsp. curry powder
1/2 tsp. salt
1/4 tsp. ground black pepper
4 (4 oz.) skinless, boneless
chicken breast halves
1/3 cup all fruit apricot spread
2 tbsp. lemon juice
2 tbsp. water
2 tsp. grated lemon zest
Directions:
Combine curry powder, salt, and black pepper in small bowl and sprinkle over chicken. Heat a medium skillet coated with cooking spray to medium-high heat. Cook chicken about 5-6 minutes each side, or until done. Place chicken on serving platter. To make the sauce, add apricot spread, lemon juice and water to the pan, whisking until smooth. Cook over medium heat for 1 minute and immediately spoon over chicken. Garnish chicken with lemon zest and serve.
