Chicken Waldorf Salad
Serves 4
Prep time: Approximately 30 minutes
Ingredients:
1/3 cup low-fat mayonnaise
1/3 cup nonfat plain yogurt
2 tsp. lemon juice
2 tbsp. honey
1 red apple, diced
1 cup grapes, halved
1 cup celery, sliced
1/2 cup walnuts, chopped
3 cups cooked chicken breast, chopped
Directions:
Combine mayonnaise, yogurt, lemon juice and honey in a medium mixing bowl. To the same bowl, add apples, grapes, celery, walnuts, and chicken; mixing well. Chill for 2 hours and serve over a bed of lettuce.
