Cranberry Apple Pie Crisp
Serves 6
Prep/cooking time: Approximately 50 minutes
Ingredients:
5 cups thinly sliced, cored baking apples
1 cup whole fresh cranberries
2 tablespoons granulated sugar
½ tsp. cinnamon
½ cup quick-cooking rolled oats
3 tbsp. brown sugar
2 tbsp. all-purpose flour
½ tsp. apple pie spice
2 tbsp. butter
Directions:
Preheat oven to 375 degrees. Combine apples and cranberries in a square 2-quart baking dish. In a small bowl mix together granulated sugar and ½ tsp. cinnamon. Sprinkle over fruit and toss to coat. In a medium bowl combine oats, brown sugar, flour and ½ tsp. apple pie spice. Cut in the butter using a pastry blender until crumbly. Sprinkle oats mixture over apple mixture. Place uncovered dish in oven and bake for 35-40 minutes, or until apples are tender and bubbly. Let sit for 10 minutes before serving.
