Herb Roasted Cauliflower

Serves 6
Prep/cooking time: Approximately 40 minutes

Ingredients:

3 cloves garlic, minced
3 tbsp. olive oil
1 head cauliflower,
separated into florets
½ cup grated parmesan cheese
Salt and pepper to taste
2 tbsp. fresh parsley, chopped
2 tbsp. fresh basil, chopped

Directions:

Preheat the oven to 450 degrees. Meanwhile, grease a large baking dish. In a large mixing bowl, place the olive oil, garlic, and cauliflower, mixing well. Pour into the greased baking dish and season with salt and pepper. Bake for 25 minutes, making sure to stir a few times, allowing for even roasting. Next, top with parmesan cheese, parsley, and basil, and broil for 3 to 5 more minutes or until golden brown.
