Raspberry Couscous Salad
Prep time: Approximately 20 minutes
2 tbsp. extra-virgin olive oil
2 tbsp. orange juice
1 tbsp. cider vinegar
2 tsp. finely chopped shallots
¼ tsp. salt
¼ tsp. ground pepper
2 cups whole-wheat couscous, cooked
1 cup peaches, chopped
1 cup raspberries
Whisk oil, orange juice, vinegar, shallots, salt and pepper in a large bowl.
Add cooked couscous, peaches, raspberries and almonds, tossing to combine.
