Raspberry Oatmeal Pancakes

Serves 4
Prep/cooking time: Approximately 20 minutes

Ingredients:

1 ½ cups whole wheat flour
¾ cup old-fashioned oatmeal, uncooked
2 ½ tsp. baking powder
1 tbsp. sugar
¼ tsp. salt
1 ½ cups non-fat milk
1 large egg
2 tbsp. unsalted butter, melted
1 cup raspberries, smashed

Directions:

In a medium bowl, whisk together flour, oats, baking powder, sugar, and salt. In a separate bowl, mix the milk, egg, and butter together. Add the milk mixture into the dry ingredients and mix gently until barely combined. Add the raspberries and gently fold in. Cook ¼ cup of pancake mix in a non-stick griddle pan over medium-high heat flipping once. Serve and enjoy.
