Stuffed Apricots with Goat Cheese

Serves 6
Prep time: Approximately 15 minutes

Ingredients:

6 apricots, fresh
4 oz. goat cheese, low fat
3 tbsp. raw honey
1/4 cup chopped pecans

Directions:

Cut apricots in half and remove the pit. With your hands make a small ball of goat cheese and press into the center of the apricot. Cut the apricot in half again and place on serving platter. Drizzle with honey and garnish with pecans to serve.
