Stuffed Portabella Mushrooms

Serves 4
Prep/cooking time: Approximately 30 minutes

Ingredients:

4 Portabella mushrooms,
stems removed
2 cups chopped cherry tomatoes
1 cup panko breadcrumbs
1 cup skim mozzarella cheese
¼ cup chives
Salt and pepper to taste
Cooking spray

Directions:

Preheat broiler. Line a baking sheet with foil and spray with cooking spray. Clean the underside of the mushroom by using a spoon to remove the gills. Place mushrooms with the gills facing down on a lined baking sheet and broil for 5 minutes. In the meantime, combine the chopped tomatoes, panko, mozzarella cheese, and chives. Flip mushrooms over and fill evenly with the cheese mixture. Sprinkle with salt and pepper and broil for 5 more minutes, or until the cheese is melted.
