Thai-Seasoned Baked Yams and Sweet Potatoes
Serves 6
Prep/cooking time: Approximately 1 hour
Ingredients:
2 sweet potatoes, peeled and cubed
3 purple yams, peeled and cubed
1 large carrot, chopped thickly
3 tbsp. vegetable oil
½ tsp. cayenne pepper
½ tsp. cumin, ground
2 tbsp. maple syrup
1 bunch cilantro, chopped coarsely
Directions:
Preheat oven to 350 degrees. In a flat casserole dish, add sweet potatoes, yams, and carrots. Pour oil and sprinkle vegetables with cayenne pepper and cumin. Tossing to coat well. Next, add 3 tbsp. water to the dish and bake in the oven for 45 minutes. Once the vegetables are soft, remove from oven and top with syrup and a little salt and ground black pepper to taste. Toss well to coat. Serve with cilantro leaves sprinkled on top.
